The expansion of restaurateur Chris LaRocca’s Crushed Red Urban Bake & Chop isn’t slowing down as the fast-casual chain plans to open its first location in Illinois.

Crushed Red is expected to open a 3,000-square-foot space at 222 Park St. in the Park Street Plaza development in downtown Edwardsville in the fall, with renovations expected to begin in the summer, according to a spokeswoman for Hilliker Corp., the real estate firm that represented Crushed Red with the lease. Dark Street Plaza LLC is the landlord, according to the Hilliker release.

Crushed Red, which serves pizza, salads and soups, has three locations in St. Louis:

▪8007 Maryland Ave. in Clayton
▪140 S. Kirkwood Road in Kirkwood
▪11635 Olive Blvd. in Creve Coeur

Crushed Red also has two franchise locations in Colorado that opened last year.

A company spokeswoman told the Business Journal then that each restaurant makes $1.5 million in revenue a year.

The chain’s expansion is something LaRocca’s been planning since he opened his first location, in Clayton, in 2012.

“The goal is to concentrate on three or four open in the St. Louis metro area,” he said in 2013.

“If the concept does prove out, then we have the opportunity to go out of town.

“The mistake a lot of people make is they start thinking about location No. 6 before Location No. 2 and No. 3 are on solid ground.”
